Under the Volcano

UNDER THE VOLCANO is based in the beautiful Baroque center of Catania on the coast of eastern Sicily.  Sandwiched between the Mediterranean and Mount Etna, the highest active volcano in Europe, Catania is a cultural expression in complete symbiosis with nature. This explains the dynamism and energy that is felt here and is the overreaching theme behind the design of this singular program.

The tour will be open to a small group (maximum 8) and scheduled once a year only.   This will allow us to provide a high level of personalized service in an intimate setting. The week will be organized around daily themes intended to familiarize participants with the rich cultural and gastronomic heritage of Catania and the surrounding provinces.

To provide the widest range of culinary experiences to the group meals will be offered in different venues of varying levels of refinement, all of which will be of the highest quality.  To eat in Catania means to eat, first and foremost: seafood, so many menus in Catania will be based on local catch. Land based dishes will also be included especially during our trips in the provinces.

Program Itinerary

Sunday PM Catania. Orientation followed by Sommelier led presentation of Sicilian Wine followed by tasting.  Restaurant dinner.

Monday AM Catania: Sampling of the city’s street food highlights, private tour of Palazzo Biscari followed by visit to Catania fish market where we will enjoy a restaurant lunch.  PM tour of the Benedictine monastery of San Nicolo l’Arena. Free evening.

Tuesday AM/PM Guided trekking excursion on Mount Etna.  Lunch in small country restaurant. Free evening.

Wednesday AM Etna Winery visit followed by lunch.  PM Visit Taormina. Optional Restaurant dinner.

Thursday AM Visit to organic goat cheese farm in province of Siracusa followed by tasting lunch PM Visit producer of Sicily’s only DOCG wine Cerasuolo di Vittoria in Chiaramonte Gulfi. Dinner at winery.

Friday AM Visit self sufficient family farm outside Noto during olive harvest followed by lunch prepared by owners PM Visit to the Baroque town of Noto, a UNESCO World Heritage Site.  Free evening.

Saturday AM Trekking excursion to the necropolis canyon of Pantalica, another UNESCO World Heritage site. Lunch at site. Restaurant dinner.

Sunday AM participants depart after breakfast.

There are some important pre-requisites to attend this program. First, is a LOVE OF FOOD and acceptance of the menus that we have organized with our service partners.  The class is not designed for anyone with allergies and food aversions.  We will be happy to accept vegetarians as long as they eat seafood. For land based menus we will find vegetarian solutions.  Last but not least, participants must be physically fit and capable of doing a LOT of walking and standing on one’s feet for an extended period of time. The treks on Etna and Pantalica will be mildly strenuous and will involve moving up and down on uneven terrain for up to 3-4 hours total time with a break at our destination. The street food segment and monastery tour in Catania will be conducted on foot alone as well as the trip to Noto. In historic centers in general it is not possible to bring a vehicle.

Fees include: accommodations; breakfast, 6 lunches and 4 dinners; wines, tours, tastings and excursions plus related transport, pick-up from and to Catania airport.

Participants will be lodged at the Hotel Centrum in Catania.  The hotel is situated in a very central location, only footsteps away from Piazza Bellini, home of the city’s beautiful opera house.  It is a perfect spot from which to explore the historic center on evenings after the daily activities conclude.

White Truffles & Brunello

The Best of Tuscan Gastronomy: White Truffles & Brunello

2 – 9 November 2025

This unique tour is offered only once a year during white truffle season in the territory of San Giovanni d’Asso to a maximum of 10 participants.  It is organized around cooking classes and daily tours to artisan producers which culminate in white truffle hunting and truffle based meals. 

Wine will be the over reaching theme of the week given our location in Montalcino, home of Brunello, one of the best Italian reds and the #1 single variety San Giovese red of Tuscany. Our winery visits change annually and are chosen among estates producing the best releases that year.

The program begins with a sommelier presentation of Tuscan wines and tasting and is followed by a week of densely scheduled visits and dining in some of the areas finest restaurants.

Please Note

The only pre-requisites for this course are love of food and reasonable physical fitness. The 2 hour hike near the Abbey of Monte Oliveto and the truffle hunt involves walking down and back up steep hills and the cooking classes will be held on the fourth floor of a historic building with no elevator.

The program is not designed for vegetarians or those with food allergies and aversions.

Fees include: course, accommodations, all meals and excursions plus related transport, local movement from and to Buonconvento train/bus stations and to and from location.

Participants will be based in a small hotel, the Hotel Roma, in the village of Buonconvento. The Hotel Roma is in walking distance to Maddine and Joe’s home, the base for the cooking classes. This location will also allow participants to explore the historic village during free moments.

Friday AM Truffle Hunting and truffle based lunch. PM Free Time, typically a visit to the thermal spa at Bagno Vignoni. Restaurant Dinner.

Saturday AM Cooking class followed by lunch in Buonconvento. PM Possible oil mill visit. Truffle based Restaurant Dinner.

Sunday AM Departure after breakfast.

Zoom Cooking Course

Tuscan Epicure Zoom Cooking Courses

These courses are offered live from Italy through the internet using Zoom technology to bring the cooking demonstration into your home.   It is a series of classes organized around making one of a variety of pasta dishes with a paired wine.

These sessions are currently suspended as we are in the New York City until June 2023.

Each course runs approximately one hour and will be followed by an informal discussion session while Maddine and Joe eat the prepared meal.

Participants will receive the recipe, shopping links for key ingredients and paired wine if available, plus link to view the session recording after the class concludes. The recording will be accessible for 2 weeks.

REGISTRATION CONDITIONS & SESSION DETAILS:

Registration occurs via e-mail followed by payment. Registered participants will receive the Zoom session details and protocol via e-mail at latest 2 days before session date. Only registered participants will be admitted to the sessions. Registrants who fail to join a session will forfeit the fee but will still have access to to the session recording and receive recipe with shopping links.

FEES: $12.00 per individual session. NOTE: At the present time we are not selling group packages.

Holders of existing group packages must register via e-mail for each class they plan to attend.

PAYMENT METHODS:

1. Venmo (A FREE mobile App that is very easy to use)  to: @Maddine-Insalaco;

2. on-line bank transfers via ZELLE* to: m@landscapepainting.com. 

Both of these are FREE of charges to both buyer and seller;

3. For a slightly higher fee (up to 5.5 %) we can also send a PayPal invoice via e-mail.  This allows the use of all major credit cards and NO PayPal account is required. Those choosing this option must send us an e-mail request to create the invoice.

*Zelle does not work with the Firefox browser for some banks (i.e. Citibank). Google Chrome is the best option for this payment method.
